Bill & Coo
Built on top of a serene hill in Mykonos, this restaurant turns dinner into one of the most interesting gastronomy experiences in Greece. Olives, capers, samphire, citrus, fresh fish and local vegetables are transformed into unique dishes through the use of innovative techniques that preserve their classic savouriness. Keeping close ties with tradition, the chefs researched local recipes and the island’s folklore and wildlife to create a cuisine that has a Greek identity and uses local produce by respecting raw materials and their seasonal character. The restaurant is located in the Bill & Coo boutique hotel and benefits from a unique sunset view of the island of Tinos, Syros and the famous windmills of Mykonos town.
